Kitchen Staff Occupational Safety and Health Safe Behavior
Abstract
Background: Occupational accidents may be caused by unsafe behavior, including in kitchen environments where workers are exposed to various hazards, such as slippery floors, hot oil splashes, high temperatures, and the use of sharp equipment. A preliminary study at the MBG X Kitchen in Jatimulyo, South Lampung, identified indications of inadequate hazard awareness, incomplete use of personal protective equipment (PPE), and non-compliance with standard operating procedures (SOPs).
Purpose: To analyze the effect of daily safety briefings on the safe behavior of kitchen staff at the MBG X Kitchen in Jatimulyo, South Lampung.
Method: This quantitative study employed a pre-experimental design using a one-group pretest-posttest approach. The study population consisted of 45 kitchen staff, of whom 43 respondents were selected using total sampling after excluding one security officer and one accountant who were not directly involved in kitchen operations. The intervention consisted of daily safety briefings conducted for 14 consecutive days. Data were collected using a safe behavior questionnaire and an observation sheet to assess the implementation of the safety briefings. Data were analyzed using a paired-samples t-test.
Results: The mean safe behavior score increased from 38.58 at pretest to 54.74 at posttest. Statistical analysis demonstrated a significant difference between the pretest and posttest scores (t = -24.161; df = 42; p < 0.001). The implementation of the safety briefings also improved from the moderate category (37/56; 66.07%) to the very good category (52/56; 92.86%).
Conclusion: Daily safety briefings had a significant effect on improving the safe behavior of kitchen staff. Consistent implementation of daily safety briefings, supported by visual educational media such as safety videos and posters, is recommended to strengthen the safety culture and prevent occupational accidents in the MBG Kitchen environment.
